Gold Doubloons

My little brother absolutely loves these chocolate gold coins! He calls them gold doubloons because he watches Jake and the Never-land Pirates, a show for little kids on Disney Junior. We do these coins for St. Patrick's Day but they are fun for pirate parties and treasure hunts too!

Happy Valentine's Day!!!

We've been dipping strawberries all morning trying to keep up with the Valentine's rush! This year we have all kinds of strawberry packaging! Tons of cute boxes and baskets and our famous chocolate bowls!

An Apple a Day Keeps the Doctor Away

It’s almost Valentine’s Day!!! And we are crazy busy getting ready here at the factory! There is a lot to do! Today, I was in charge of making caramel, chocolate apples. I lucked out because these are my favorite!

It’s a long process… first we have to de-steam, wash and dry the apples. Next we stick all of them with sticks. After that, we dip them in caramel. When the caramel sets up its time to dip them in chocolate. Then finally they are ready to be decorated! Some of them we carefully string with milk, and white chocolate to make our drizzled apples and some of them are covered with cinnamon sugar to make our famous apple pie apples!

Salted Caramels

We started experimenting with Salted Caramel!

We’ve got everything just about perfect! Now we are just experimenting with salt size! It’s a rivalry between large salt grains and small salt grains! The first batch we compromised and mixed the salt together so each caramel had a little of both! But, it's time to decide! What do you think?
